This super speedy chipotle lime dressing is great over any salad or veg… I added chicken too!
4 tbsp peanut chipotle
Zest & juice of 1 lime
1 garlic crushed
2-3 tbsp water
Simply mix until you get to a creamy consistency. I added this to a corn, broccoli, cucumber and tomato salad and topped with chopped peanuts, coriander and spring onions. Then threw on some extra chicken! Absolutely delicious.
